Great Rye Whisky Meets Great Sherry Casks
Pedro Ximenez (PX) is a fortified Sherry wine made in the Jerez region of Spain. It is a sweet, dark, dessert wine. It is made from a white Spanish grape variety of the same name. PX Sherry is known for its intense flavor, deep color, and strong taste of raisins and molasses. Grapes are dried in the sun (asoleo) to concentrate their sweetness, then used to make a thick, black liquid that is fortified and aged in solera. Once the casks are no longer useful for aging more Sherry, they are sold to distilleries to age whisky!
First this 100% B.C. rye grain whisky spent its first few years in new American oak casks. Second, and only once the whisky is already matured, it is transferred to once used Pedro Ximenez sherry casks. These freshly emptied casks are shipped directly from Spain. They come with a complimentary few litres of Sherry wine. Not only is this wine an assurance of cask quality, but we enjoy using it in our lounge cocktails! Finally, we taste the whisky in the casks, only bottling once we’ve achieved the flavour we are looking for.
PX cask Rye Whisky is from the same set of casks that the Strath Liquor store’s Iberian Cascadian release was selected. That whisky went on to win Best Single Barrel Release AND Best Cask Strength Whisky in all of Canada (Canadian Whisky Awards 2024)!
