Fuenteseca Cosecha is one of the most transparent and compelling expressions of vintage tequila on the market, capturing not merely a production method but a specific harvest, place and moment in time. Maestro Destilador Enrique Fonseca distilled this 2020 release at Tequileña (NOM 1146) from 100% Pinto Azul, a distinctive subtype of Blue Weber agave marked by dark spotting on its pencas. The agaves were cultivated at elevations exceeding 6,700 feet in San Ignacio Cerro Gordo, where the cool climate and iron-rich volcanic sandy loam encourage slow maturation and remarkable aromatic complexity. After a six-hour pre-cook, the agaves were cooked for 24 hours in a low-pressure autoclave, rested for six additional hours, and crushed with screw and roller mills. Fermentation took place in stainless steel tanks with deep well water and proprietary yeast, followed by double distillation in copper alembic pot stills. The tequila was then rested in stainless steel before bottling at a beautifully expressive 45.7% ABV. Entirely additive free, this is an exceptionally pure, precise and deeply evocative blanco, with delicate florality, gentle natural sweetness and a vivid sense of its extraordinary highland origin.
