Tasting Notes
Nose: A vibrant mix of gammon ham with torched pineapple, prunes dipped in salt and sweet strawberry jam on a salty cracker, complemented by almond oil and coconut macaroon.
Palate: Salt-baked pear, meadowsweet, wildflowers and lemon thyme are joined by sultanas, cherrywood embers, cocoa powder and pink peppercorns, creating sweet-savory depth.
Finish: A gentle, buoyant puff of smoke leads into Himalayan pink salt and red currant cordial, where sweet and salty mingle in a dry, lengthy close.
